{"id":2148,"date":"2020-03-22T17:09:17","date_gmt":"2020-03-22T17:09:17","guid":{"rendered":"http:\/\/rosiemeleady.com\/?p=2148"},"modified":"2020-04-03T17:10:04","modified_gmt":"2020-04-03T17:10:04","slug":"day-13-whats-cooking","status":"publish","type":"post","link":"https:\/\/rosiemeleady.com\/index.php\/day-13-whats-cooking\/","title":{"rendered":"Day 13 \u2013 What&#8217;s Cooking?"},"content":{"rendered":"<p class=\"p1\"><span class=\"s1\">There are great suggestions going around about what to do to pass the time in self-isolation and learning to cook is one that is very popular.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">The thing is, you\u2019ll probably discover you don\u2019t have at least three of the ingredients needed. Are you going to risk your health and the health of those around you to nip to the store for Sweet Paprika when you have Smoked Paprika on the shelf? No, you won\u2019t, because you are a responsible citizen and you will substitute ingredients instead. So I think every \u2018recipe giver\u2019 should include alternative ingredients that can be used as substitutes.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">To help start this idea, I have shared a link at the end of this post to one of my favourite recipes. It\u2019s Chickpea Curry and it\u2019s a quick, easy, vegetarian recipe that is very tasty created by a couple of Irish chefs called the Happy Pear. <\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">As I said, you probably won\u2019t have all the ingredients, so here\u2019s my substitute ingredient suggestions: <\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">If you don\u2019t have chickpeas you could use cannellini beans (white beans). <\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Coconut milk is also required \u2013 I find this difficult to get in Italy so it\u2019s probably not something you have in your cupboard, so you could use cream instead. <\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">If you don\u2019t make curries regularly you may not have curry powder you can just leave that out, and if you don\u2019t have paprika you could leave that out as well.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">If you don\u2019t have a lime you could use a lemon.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Coriander is not a thing in Italy, I can\u2019t find it anywhere, I\u2019m growing my own now, but in the meantime I use flat leaf parsley instead.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">So there you have it.
